chia pudding

My husband decided to give this a try … and he was amazed at how easy it was… funny how we hesitate on making stuff at times cause we think it will be hard or take  long to make.

This took 5 minutes to prepare and then placed in the fridge to cool for about 20 or so minutes.

ingredients

2 cups of coconut milk  (or other vegan milk of choice)

8 tablespoons of chia seeds

1 teaspoon of vanilla

4 tablespoons of cacao

3 tablespoons of maple syrup

mix all the above ingredients together and then refrigerate

to serve you can top with fruits or nuts and maple syrup

(for those with a sweeter tooth , I would suggest adding a little more maple syrup in the ingredients)

and voila!

vegan chocolate macadamia biscotti

So my husband played around with a recipe for the last couple of weeks… and he finally got it to where we all love the biscotti !

1 and 1/3 cup of brown rice flour flour

1/4 teaspoon of salt

1/2 teaspoon of cinnamon

1/4 to 1/2 teaspoon of baking powder

1/3 cup cup of coconut sugar

mix the above together

1/3 cup of macadamia nuts

1/3 cup of chocolate chips ( or more if you like more chocolate )

put the chocolate and macadamia nuts in food processors to have smaller chunks

1 vegan egg replacement (1 tablespoon of ground flax with 3 tablespoons of water )

1/3 cup of maple syrup

2 tablespoons of melted coconut oil

then mix all the ingredients together and roll  to form shape

cut into cookies and place on cooking sheet at 325 degrees for 27 minutes ( depends on your oven )

they should come out a perfect blend of crunchy and chewy

note: it is always fun to change recipes to ones liking … so maybe use a different flour , or more chocolate / macadamia or bake for longer if a crunchy biscotti is desired 😉

organic vegan hazelnut spread

so the thing with being an organic nut  and thriving to be vegan, nutella doesn’t quite make the cut … so we made our own version

we mix maple syrup and hazelnut butter together… and you can add cacao powder to add the chocolate flavour, but just the maple syrup and hazelnut taste amazing

and although it has been years since we have had nutella, I can say it tastes better then nutella , my kids love this … and my 2 year old likes eating it with a spoon

it tastes amazing spread on top of pancakes 🙂

can it get any more simple than that ?!
